Fruit and Fruit Processing

This topic will be divided in different sections.

Section ONE is dealing with the varieties of fruits which are abundant in the styrian region. Beside the explanation about the growing season and growing conditions the focus will be put on the „chemical“ and nutritional composition of the different varieties.

Section TWO is focussing on fruit processing and the different products. This will include the technology for the production of

  • Juices, nectars and syrup
  • Fruit wine
  • Spirits
  • Liquers
  • Dried fruits

The last section (THREE) is dealing with quality aspects of the produced products. This also includes „Preservation and spoilage“ and different faults and defects and how to avoid them to get optimum quality
